Mexican Salad

These light and easy to find ingredients will inspire the entire family to eat healthy. Feel free to adapt to your liking.


Ingredients

  • 8 corn tortillas
  • 2 ripe tomatoes
  • a green pepper
  • 1 piece of red pepper
  • 1 avocado
  • 2 sticks of celery
  • 1 onion
  • 4 tablespoons cooked corn kernels
  • 1 chilli (optional)
  • lemon juice
  • 2 Cans of Isabel Light Tuna in Olive Oil
  • few leaves of cilantro
  • salt

Preparation

Chop the tomatoes into small pieces and do the same with the peppers and onions. Removed the leaves from the celery and dice. If you want to give it a spicy kick, also add a bit of chili pepper also finely chopped.

Cut the avocado in half, remove the seed and spoon out the avocado to cut into slices. Save for topping the salad later.

Put all the chopped ingredients in a bowl and sprinkle with a little salt. Add light tuna, corn kernels and chopped cilantro leaves. Stir well to mix the ingredients and add a dash of lemon juice.

Warm the tortillas on a griddle or in the microwave between two damp napkins.

On each plate, lay out a corn tortilla and spoon the salad mixture on top. Finish off with a few slices of avocado.
